Experience

Senior Cook, et al.

April 2013 to Present

Compass Group — Eurest (Corporate Café)

Emerald Commons, Wells Fargo Customer Information Center

Charlotte, North Carolina

In one of Eurest's most important account kitchens, I have been variously responsible for producing entrées and other proteins, vegetables and starches, grill and fryer foods, breakfast foods, and baked goods. I have catered throughout the enormous facility and its satellites. I have assisted with inventory and ordering, HACCP logging, and other office functions. I am well-respected as a cook and teammate and I am known for my positive attitude and attention to detail.

Prep Cook

September 2012 to April 2013

131 Main Restaurant (Casual Fine Dining)

Cornelius, North Carolina

I started as a dishwasher ("Hobart"), and advanced to Prep Cook in under two months. I prepared meats, sauces and dressings, appetizer ingredients, side dishes, and salads for use on the line. I cooked desserts and prepped everything from deli cheese to kale chiffonade. I had not yet developed any speed, but I was known to produce the best "to spec" result. I left on very good terms and I am proud of my work there.

Stagiaire

August to September 2012

Croc's 19th Street Bistro (Casual Fine Dining)

Virginia Beach, Virginia

I shadowed my cousin, Executive Chef Matt Knack. I was introduced to professional cookery and the modern restaurant environment.

Home Cook

Various Home Kitchens

I have been an increasingly serious home cook for most of my life. I have made a conscious study of food and cooking. My comprehensive reading has included general food and cookery, food science, and food policy and politics. My practical self-education has included standard cooking techniques as well as focused studies of bread baking, zymurgy, charcuterie, and various cuisines.

Fast Food

1982 to 1985

Fast food experience at Hardee's, McDonald's, and Domino's where I worked variously as a cook, cashier, shift supervisor and delivery driver.
