Texas Caviar
Judy Nesmith, Siobhan, Texas
- 2 c. fresh tomatoes, chopped
- 1 can black-eyed peas (15-oz.), drained
- 1 sweet onion, chopped
- 1 clove garlic, minced
- 1/2 c. olive oil
- 1/3 c. red wine vinegar
- 1/2 c. fresh cilantro, chopped
- Salt and pepper to taste
Combine all ingredients in a large bowl and chill for several hours before serving with tortilla chips.
