Daire's Left Over Mashed Potatoes In Tortillas

• Left over mashed potatoes, enough to serve four people
• 1 lb. of ground beef, browned and seasoned to taste (salt, pepper, garlic, onion, bell pepper)
• 1/2 lb. of grated cheddar or colby cheese
• Flour tortillas, the small ones or "gorditas"

Brown ground beef, mix in potatoes and cheese. Get everything good and hot and melted. Serve rolled up in hot flour tortillas. Tortillas can be heated individually on a "comal" or in a heavy iron skillet. Hot rocks do well at campfires.
