Vegetarian Thai Massaman Curry


Marinate tofu in tamari or soy sauce for about 1/2 hour. Heat a the peanut oil in a wok (or appropriate receptacle), Deep fry the tofu until golden brown. Drain. Place a few tablespoons of oil in the skillet or wok, fry the garlic.Add a few tablespoons of Massaman curry paste (available at most Asian markets) Fry for a few seconds. Add a peanut butter (type and amount to taste. I just use plain old Jif) Blend. Slowly the coconut milk. Simmer and stir until well blended. Add broccoli. Cook to desired texture, but the longer the better!

Now taste, now may be a good time to add sugar or molasses. or not. Add fried tofu. Serve with Jasmine or basmati rice. Carnivores, this dish is traditionally made with beef strips and works well, too. Add with garlic. Seitan works as well.

I know you maybe looking for witchy quasi-Celtic dishes but my coven mates and I made this quite a bit back in College and reflects some of our nonviolent aspirations and my reverence to the Thai People.
