Homemade Vanilla Extract


for use with all recipes calling for vanilla extract

Score vanilla beans and place into colored bottle. Pour vodka into bottle, close lid and shake for several minutes. You should see pieces of vanilla floating in the liquid. Place in a cool dark cabinet taking out a few times a week to shake. Will be ready in a few weeks. Vanilla flavor will increase over time.

I use Skyy vodka because the bottle is already colored (blue). Using a colored bottle protects the flavor of the vanilla which is broken down by light.
