Beans


Oceana at the Realm, Massachusetts

Soak the beans over night. In the morning parboil them for one hour.

Then run cold water through the beans in a colander or strainer.

Dice the rind of the salt pork into about one inch squares.

Put half of the salt pork on the bottom of the bean pot.

Put the onion on the bottom of the bean pot also.

Put the beans in the pot.

Now take all the rest of the ingredients and mix with hot water.

Pour enough hot water and mix over the beans to cover them.

Add the remaining salt pork.

Bake at 300 degrees for about six hours.

Serve with brown bread and franks
