Green Man Salad

- 2 c. of each greens; baby dandelion leaves, spinach, romaine lettuce, mustard greens
- 1 container of grape tomatoes
- 8 radishes sliced thinly
- 1 red onion sliced thinly and then quartered
- 1 lg. can of sliced black olives
- 1 container of fresh mushrooms slices thinly
- 1 lg. cucumber sliced thinly
- 1 sm. bell pepper of each color sliced thinly; red, orange, yellow, green and purple
- 1 sm. bunch of each; broccoli crowns and cauliflower crowns
- 1 bunch of asparagus tips
- 1 sm. zucchini sliced thinly
- 1 sm. yellow squash sliced thinly
- 1/2 lb. baby carrots whole or halved
All ingredients can be used or changed. The important thing for this salad is to put everything that tastes good that is in season into it. Wash all ingredients and toss it together. Serve with your preferred dressing and french bread.
